One pot dishes that don’t have tomatoes as a base?

Per the title - any ideas? I’ve had to cut out tomatoes due to reflux, and it feels like a lot of the meals we used to eat are now off menu. Previous staples included:

Chilli
Spaghetti bolognese
Sausage and butter bean casserole
Chickpea curry (I did try this with coconut milk and it was okay-ish)
Chicken and chorizo stew - that might work as a traybake with chunky veg and potatoes, maybe?

Onions aren’t great either, but I have found celery works as a decent sub. I’ve just had my medication increased by the GP so hoping this isn’t permanent, but any ideas would be much appreciated!

I'm in this position too, though I've just been diagnosed with a hiatus hernia, so know for sure that changes to diet need to be permanent :(

I've gone for a moderation approach. I'm not eating raw tomatoes at all, or raw onion. But I made chilli last week, and where I'd normally add two tins of tomatoes I used only one, and added stock instead. It worked out fine.

There are just so many family meals I can't imagine never making again!

Beef stew...chuck all in slow cooker

Risotto...swap onion for celery and leave out tomatoes (I hate them so rarely use them)

Chicken casserole...use chicken stock as base and then thicken with bistro or cornflower

Chicken tonight do a creamy mushroom sauce and a honey and mustard one. I use them all. Chick them meat and sauce in and then just cook pasta fresh when I get home

Mince with gravy...can do a big batch and use in similar way as you describe for chilli

Oh and lemon wedges to squeeze over the top and chilli flakes if you like it hot (used to put them in but don't now as DS also eats it)

It's a fave dish in winter in this house and can be done in the slow cooker. If you're needing veg then carrots would work well.

It also freezes well so a 500g mince and 8 pack of sausages will easy do 2-3 meals.

You can do most of what you listed without tomato - just adjust the recipes and use stock, beer, wine or water and cornflour if needed for thickening.

You can make chilli without tomatoes. I do mine in slow cooker - made 8 portions today and took 5 mins.

Half packet chopped frozen onions
Half pack chopped frozen peppers (obv can use fresh but I’m lazy!)
Large pack of beef mince
Whole jar of red jalapeños - juice and all!
Sprinkle of thyme
Sprinkle of chilli powder
Sprinkle of garlic powder
3/4 bovril/oxo cubes
Splash or Worcester sauce

All in slow cooker o low for 8 or high for 4 hours

Give it a stir, Chuck in a couple of cans of kidney beans and add a few gravy granules if it needs thickening up.

Consider of you can use onion or garlic oil (sautee in lots of oil then ditch solids) to add your oniony taste. It's a trick low FODMAP people use.

White pizza, white lasagna, and white Bolognese are all real things!

Also we love a good pot of chicken noodle soup.

You can roast peppers for about 40 mins, skin them (stick them in a plastic bag for five mins then skin peels straight off) then blend them with a little water which gives a tasty sauce in place of tomatoes (add whatever herbs and seasoning) with pasta, chicken, fish...

@appin it is so rubbish, isn’t it? The absolute worst things for me are tomatoes, onions, and chocolate. Things like sausages aren’t great but bearable. I don’t miss chocolate at all, weirdly, but am finding being limited with dinner type meals a real pain.

It is rubbish. I'm trying to come off the esomeprazole, and have a review with my gp in a few weeks. Would really like to manage with dietary changes.

Garlic is the worst for me. Terrible pain after eating garlic bread, one slice! It's such a shame, garlic is in all good food!

I don't think traditionally either chilli or Bolognese should have tomatoes in so if you can find some 'authentic' recipes, you might be able to have both.

Just to be clear, by “one pot” I just mean fling stuff together and leave it to do its thing. No issues with pans or hob space, I am just really lazy!
