One pot dishes that don’t have tomatoes as a base?

Per the title - any ideas? I’ve had to cut out tomatoes due to reflux, and it feels like a lot of the meals we used to eat are now off menu. Previous staples included:

Chilli
Spaghetti bolognese
Sausage and butter bean casserole
Chickpea curry (I did try this with coconut milk and it was okay-ish)
Chicken and chorizo stew - that might work as a traybake with chunky veg and potatoes, maybe?

Onions aren’t great either, but I have found celery works as a decent sub. I’ve just had my medication increased by the GP so hoping this isn’t permanent, but any ideas would be much appreciated!

We’re doing those, @chillied - so great minds! I have a butternut and safe risotto on this week’s plan, and we had veggie stir-fry the other day.

I think I am missing being able to put together a huge chilli at lunchtime, simmer it down for hours, then being able to use it in different ways - rice, tacos, portion for the freezer and so on.

Thai curry (although you do need a rice cooker if no second pot, and it might not be better for reflux). Beef stew. Haven't tried, but maybe chicken stew with vegetables?

Stovies.....

Replacing the onion with celery. Brown the mince and celery with 2 oxo cubes. Add a cut up pack of sausages into 4s (I use scissors) and 2-3 potatoes cubed. Top up with water and simmer for an hour or two. Thicken with gravy granules. Serve with baked bread rolls and butter.

Fair enough to be missing it! Making things with tins of tomatoes is quite a staple.

I have a recipe for a veggie lasagne that uses pesto instead of tomato sauce that I am looking forward to trying @chillied, and have also done a goats cheese and pesto pasta bake which went down really well. I have actually never had toad in the hole! We’re in Scotland where I think it is less popular maybe? I need to look into it.

I do a chicken satay curry actually so might look into some other options. We do have plenty of pots, honestly!

I really like this "cassoulet" with some nice crusty bread.

Also, I just found chicken casserole recipe buried in my bookmarks - bet it would be very nice with dumplings

Dutch stampot- basically, mashed carrots and potatoes.Season with onions , beef broth, and with LOTS of parsley.

This is lovely and has no tomato. You can increase the spice as it’s quite mild, but tasty.

Ooft, I haven’t had stovies since I was a kid @CombatBarbie! Adding to the list. That looks great @SmallElephant - we had Delia’s chicken basque tonight which is quite a similar setup so I will definitely give that a try.

Chicken in white sauce. Cod in parsley sauce, chicken casserole with a gravy base, same with sausages or beef, cottage pie.
Thick soups like chicken noodle or lentil.

Ooo I like the sound of this. Easy and simple. I've been breaking my back cooking the most complicated time-consuming dishes for myself and DD simply because I want her to be eating "good food" with "lots of veg". But I realise how stupid that sounds now because veggies can be added to pretty much any dish. Thanks for this recipe!

Some brilliant ideas here, thanks so much. DP won’t eat fish so that’s out unfortunately, and I am not big on red meat unless it is “disguised” in a sauce - which is where tomatoes are so handy!

For dinner tonight I made the following chicken/chorizo rice that's evolved gradually depending what we've had in the fridge and now is a favourite.
Peel and dice a ring of chorizo saute from cold in a large shallow pan preferable that can also go in the oven (I have some knock of le creuset type dishes that are good for this), dice some boneless chicken thighs, brown in the oil released from the chorizo, add finely diced onion (could leave it out or use celery) , a large red pepper diced and some crushed garlic, cook until onion and pepper are soft. Add a good whack of smoked paprika maybe two tablespoons or more, stir and then add 1.3 litres of good chicken stock, simmer covered for 10-15 minutes. Pour in 375g paella rice, stir and add frozen petit pois (I also put halved cherry tomatoes on top but not necessary). Put in the oven no lid for 20-25 minutes (transfer to a baking tray of you don't have a hob to oven dish). Take it out put the lid back on and leave for five minutes. Straight to the table, serve with salad.
