Ok so I'm cooking for the first time (just xmas dinner, I can cook a sunday dinner )
Anyway dh wants sausage meat and strips of bacon on turkey a-la MIL so:

  1. As I am making separate stuffing, can I put the sausage meat in the turkey?
  2. Will the cooking time be much more if its stuffed with sausage
  3. Do I put the strips of bacon on the turkey when I start cooking or part-way through, and does it increase cooking time?

Firstly your stuffing can go in with the turkey. Remember to weigh the stuffed bird to calculate cooking time. So yes the cooking time will increase. Some people dont like eating stuffing from the bird so I make some stuffing balls to cook separately too.

The bacon strips go on at the start with a bit of butter salt and pepper. The turkey should then be covered with foil. The foil gets removed during the last hour to allow trukey to brown. Ensure when you place foil over to start that its not wrapped tight to the bird you need the air to circulate.

Finally dont panic just see it as an oversized chicken!!!!!!!

If DH wants turkey a la MIL, perhaps you should ask her what she does!

If you put sausage meat in, DO increase the cooking time. I never have... won't your DH accept oven-baked chipolatas instead, much less iffy.

Bacon wont much alter the cooking time. It may not take as long to cook as a turkey though... but its meant to be there to make the turkey nicer rather than necessarily turning out well itself. You could hedge your bets by doing some separate bacon rolls as well.
