Easy impressive light pud recipe for xmas eve? Help!

Mother and her partener coming for dinner on xmas eve - rest of the menu is sorted, but I would like to do an impressive pud, oh and it needs to be easy! Any suggestions?

Easily done - Pannacotta with raspberries a great make ahead, light pudding.

Rachel Allens recipe:

serves 4

300 ml cream
25g caster sugar
1 vanilla pod
1 leaf gelatine

put cream, sugar and vanilla (split pod) into saucepan and warm until simmering. Turn off heat and leave to infuse.

Put gel leaf into bowl with enough water to cover. After 3 -4 mins will have softened. Take it out squeeze and drop in warm cream. whisk until it dissolves. Pour into ramekins or wine glasses . Takes 2 hours to set in fridge. Top with berries just before serving.

pavlova

meringues, doens't matter how messy it turns out
beaten cream with icing sugar and a little liquer
frozen berries or orange segments and toasted almonds
