Cold Roast Beef

Hello. I am catering for 10 on Xmas Eve and am going to Roast Beef to have cold on that day.

How many days before can I roast it and it still be safe to eat then? Also any good roasting receipes for Roast Beef?

Have to go to work now, but will come back later

I would cook it Saturday. Make incisions around the joint and insert slithers of garlic, followed by tiny sprigs of rosemary. Cook in a hot oven gas 8 /240 degrees until cooked to your preference. yummy 30 mins per kilo plus 20 extra . This will give you a medium finish
