I have lost my pecan pie recipe and was just wondering what recipe anyone uses if the do make it, before I go serching though the net and assorted cookbooks.

Hi there, a friend send me this recipe a while back...not tried it out yet, but it does sound nice:
Pecan Fudge Cake
1 cup corn oil
2 cups sugar
2 teaspoons vanilla
2 eggs
3 cups cake flour
3/4 cup cocoa
2 teaspoons soda
2 teaspoons baking powder
1 teaspoon salt
1 cup buttermilk
1 cup hot coffee
2 cups pecans, chopped
Filling:
8 ounces cream cheese
l egg
2 teaspoons vanilla
2 cups mini-chocolate chips
Oven temperature 350F. Mix the first 4 ingredients for 1 minute. Stir soda into hot coffee, then add all other ingredients and stir for about 4 minutes. Pour half on the cake batter into a buttered and floured bundt pan.

Filling:
Mix all ingredients together. Do not cook. Top batter with filling, then Pour rest of batter over filling. Bake for 65 to 75 minutes. Serve with sweetened whipped cream flavored with rum.

Serves 10.

I have used this one (not bothered with the whisky cream) & it's v v good & easy pecan pie from Daily Cooks

thank you 3 jingles, not sure about the cocolate as already have brownies, and chocolate chip cookies on the order of baking

kathy- that sounds quite similar to another one that i found, and to the one i lost , i'm not bothered about the whisky cream either ... tommrow is bakign day while ds is in nursery all day. so will let you know what i end up doing.
