Am doing big xmas lunch for 5 people and have just realised 3 of them dont like xmas pud. Crap!! Anyone doing anything else for pud this year?? My thoughts were perhaps an apple ang mincemeat strudel or a tart of some kind. Needs to be relitivley easy cos i have a demanding 6 month old!! Plus something that can be made the day before would be brilliant.
Any ideas PLEASE?!

I did pineapple upside down pudding with custard year before last. You can make it the night before and stick it in the fridge, then put in the microwave to warm it through.
You could also chop up an arctic roll and put it with warm (not hot!) custard - fascinates kids as the ice cream doesn't melt!

Trifle
I cake madeira or chocolate cake if you fancy a choc trifle
2 tins of pears
(a couple of tbsp of mincemeat if you want it to be festive and like the taste)
a shake of sherry
a pint of custard - made with 2tbsp of cocoa if going the choc route
Some whipped double cream
some almond slivers

method:
Break up cake into chunks and place in bottom of pretty bowl
shake over sherry
place pears over the top (drained)
make up custard (buy ready made tins or posh egg custard if in a hurry)
pour over pears
whip cream to soft peaks
pour over custard
place almonds in a dry frying pan and heat on a gentle heat until golden brown
cool then chuck over the top of the trifle
How easy is that?

Eton Mess.
Im a bit vague but I think it goes.
Broken merignues, crushed raspberries, custard and stiffly whipped cream all mixed together to form a mess. Generally its just lightly mixed as you want the different colours and textures to show through, but it takes all of 3 minutes to do. Optional extra a shot of complimentary alcohol. Serve in a pretty dish or in a tall glass.
Ive just checked delia online, and she misses out the custard and has strawberries instead of raspberries.
