Does anyone have THE most delish carrot cake icing that I simply must have??

marscapone cheese, icing sugar and lemon juice. Not sure of amount of icing sugare, just enough to sweeten but fot it to remain tart. fresh lemon juice preferably.

mmm i just eaten the most delightful carrot cake today at my sisters.We compete who can make the best.sad i know
Icing sugar,blob of butter drop of milk and then grate orange rind into it taste till flavoured enough.
Sometimes i add a sqeeze of the orange juice.

I found a really great carrot cake recipe by Nigel Slater online. The icing is fab.

Just google it and you'll find it.

Philadelpia low fat cheese
Icing sugar, just enough to sweeten.
Lemon juice (about 2 squeezes!)
finely grated orage rind

Mascarpone, icing sugar and lime juice is delicious but orange juice is good too. I grate the rind in too.

You could use the topping that Nigella uses for her chocolate Guinness cake. Icing sugar, cream cheese and double cream - it makes it a bit lighter by having the cream as well. A hint of orange rind or lime rind would be very good with that too.

i've done it the nigella way with cream and i think my mum's way is to mix butter with philly and icing sugar, also good.

Cream cheese & icing sugar here too, sometimes with butter to make it less cream-cheesy. Yummy.
