Quick parsnip question...

ok I have a pan of chipped parsnips ready to roast for my tea tonight but I have too much and DH won't eat them (the fool!). What do I do with them?

a) roast them and micro the left overs tomorrow
b) keep them in a bowl of water in the fridge and roast the left overs tomorrow?

Roast now and eat twice as many. Or roast now and reheat.

freshly roasted better IMO so keep in bowl of water and use tomorrow

I don't think they'd roast well after being soaked in water. Roast the lot now - pref with butter and honey - imo (and then eat them) Happy scoffing!

Ohh and for the record I was just checking out the best way to cook them and on BBC good food there is a recipe for maple syrup roasted parsnips, mmmmmmmmmmm!
