Has anyone a good recipe for peppermint creams they would be willing to share?

It's just icing sugar, egg white and peppermint essence isn't it? Make a very stiff paste (you don't need much peppermint, it's very strong), let it sit in the fridge for a bit - roll it out on a board (dust with icing sugar) and stamp out discs. Let them dry out (airing cupboard is good) then dip in melted dark choc.

mm, def only a few drops of peppermint essence - the last lot I made blew our heads off!
