Have a big bag of carrots that I got in Aldi for 29p, a big bag of brussels and I would like to know how long I need to parboil them and do I put them in boiling water to parboil or cold water which I bring to the boil before freezing. i don't usually freeze fresh veg, as it gets eaten pretty quick, but this is a big bagof carrots, plus its only Dha nd I who eat the brussels so want to freeze small quantities

To freeze veg I would blanch them first (dropped in boiling water, held at boiling for 1 min, then dropped into iced water for 5mins)then freeze.
