Potato skins....

we are having a small christmas party, nephews girlfriend is a very fussy veggie but I know she will eat potato skins with cheese. So i was thinking that maybe I would do a selection of different fillings

Other then cheese and onion or cheese and bacon, I dont really know what to fill them with.

Any yummy ideas.

I know no bacon but was just trying to get ideas for others, (think if I tried to give her bacon she would spit it back at me)
