anyone got a recipe for gingerbread biscuits/men?

I thought this was a fairly basic thing but can't seem to find one (looked in about 3 nigella books). Does anyone have one?

We make this one often and its lovely.

Gingerbread men

12oz (350g) plain flour
1 teaspoon bicarbonate of soda
2 teaspoons ground ginger
4oz (100g) margarine
6oz (175g) light muscovado sugar
4 tablespoon Golden Syrup
1 egg, beaten
Currants to decorate

Preheat over to gas mark 5. Lightly grease 3 baking trays.
Measure the flour, bicarbonate and ginger into a bowl. Rub in the margarine until it resembles fine breadcrumbs, then stir in the sugar. Add the syrup and beaten egg to the flour mixture and mix to form smooth dough, kneading lightly with the hands towards the end.

(I personally find it easier to handle if its has been chilled in the fridge for a 30 mins)

Roll out the dough (half at a time) on a lightly floured surface to a thickness of about 1/4 inch.
Cut out using a gingerbread man cutter and place on the prepared baking trays. Use currants for eyes and buttons.

Bake in the preheated oven for about 10 -15 minutes until a slightly darker shade. Cool slightly then lift on to a wire rack and leave to cool completely.

(you should also consider just doing a basic shortbread recipe and using man cutters - much nicer IMHO!)

ooooh, delia and proper gingerbread, absolutely delicious, but it goes really hard after a couple of days like gingernuts. here
