Can someone help me with a cooking a stew query - I rarely cook with red meat and I don't know what I'm doing!

Ok. So it's a slow cook (1 1/2 - 2 hrs) braised beef with red onions and wild mushrooms recipe. I've prepared everything and it's now in the oven. I'm supposed to get it out after one hour is up and give it a stir then put it back in for another 1/2 hr or 1hr depending on how tender the meat is. My problem is I'm going out just after the first hour is up. Shall I just stir it, turn the oven off and then put the oven back on when I get back to cook for the remainding 1/2 - 1hr? If not, what should I do?! Hope that all made sense.

Oh, I'll be out for about an hour (this is like a GCSE maths problem!)

I'd just leave it in the oven and turn the heat down really low when you're out.

Just turn the oven down slightly and leave it, It will be lovely.

what those two said, turn it down and it will be fine. The meat will be really tender and delish.

It may be an idea to add half a pint or so of water just so there's no chance of it drying out.

It already has 1/2 pint of port in it! I might add a bit of water Thanks cooking gurus.
