Makes 12
100ml sunflower/vegetable oil
110g soft light brown sugar
2 eggs
110g self-raising flour
1/2 teaspoon baking powder
1/2 teaspoon bicarb of soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
30g chopped dates
140g pumpkin/butternut squash peeled, deseeded and grated
- Preheat oven to 190 C/gas mark 5
Line a tray of 12 muffin tins with paper cases
- Whisk oil and sugar together, beat in eggs one ata time until the mixture resembles mayonnaise
- Sift the flour with the baking powerder, bicarb, cinnamon and salt. Fold in the mixture together with the dates and pumpkin/squash. Spoon into muffin cases and bake in the centre of the preheated oven for 20-30 minutes until risen and firm when pressed lightly in the centre.
