Cowboy pie

Small amount of mince (lovely if lamb mince)
3 garlic cloves
1 tin baked beans
4 small tomatoes
1 yellow pepper
1 small swede
1 large sweet potato
some normal potatoes
4 parsnips
1/2 cabbage
4 carrots
some peas

Fry the mince with no extra oil with the garlic, and put aside

fry the chopped pepper and chopped tomato in the juices in the pan, remove and put aside. In a deep casserole dish, mix the mince and tin of beans.

puree the toms and pepper if your children are fussy, leave chunky if not.

Meanwhile chop and boil the potato, sweet potato, swede and parsnip. Mash finely, and top the mince/bean mixture with the orange veg mash.

put in the oven for about an hour, until very hot all through. Serve with the remaining veg.

Children seem to like this - it's quite sweet!"

Long time in the oven. Is that to give it a crispy top? Seems everything is cooked when you put it in the oven...
