I have received 5 beetroot, any suggestions?

I don't think I really like them but I don't want to waste them. If it were just 1 then I would use it raw in a big salad but what the hell do I do with 5 of them?

Any beetroot enthusiasts out there?

beetroot and onion tart it is delicious, very sweet thing it is caramelised onion made it once but don't have the recipe as borrowed it.

Boil then peel and slice thinly. Dress with home made vinaigrette and fresh mint.Crumble fetta and crushed walnuts over the top.
Delicious. Have with lamb (grilled) and ME style bread and red wine.

roast them (after washing but be careful not to bruise them) inside foil for about an hour or until tender

serve hot with some goats cheese, chopped shallots and a peppery/mustardy salad dressing.

or just butter

Just send them to me, I can't get enough beetroot at the moment, it's the folic acid. (I'm 16 weeks pregnant!).

I hate beetroot - but borscht is quite nice, if you make it spicy and put lots of soured cream in.

Well, I must say, a few minutes ago I was very unenthusiastic my beetroots but after reading your suggestions I can't wait to use them. I like the sound of all the dishes

I will try it with lamb first as I have also just bought half a lamb and it is taking up most of my freezer space. Thank you all and keep them coming!

I quite often cook them, peel and slice, then douse in malt vinegar and tuck in!
