Ideas for meals from leftover roast chicken - already do broth and stew

HELP

we often have a roast chicken on a sunday and I need some inspiration for meals from the left overs.

I can do stock
Stew
Broth/soup

Please can you provide me with some family friendly ideas. I have 2 DS' under three and a DH that I have to either keep warm for or reheat

Chuck in some peppers, carrots, tin of toms and serve with some pasta?

Make up a white sauce add the chicken and some mushrooms or veggies and then top with a pie crust?

Fry up some onions, add some curry powder then some chicken stock, add the chicken and simmer for 15 mins then stir in some natural yoghurt

Also you could do a chicken risotto - just need the risotto rice a chopped onion and some chicken stock

risotto, curry, pies, warm chicken salad, pasta, lasagne - anything really that you would normally put chicken in!

oh we had chicken risotto at the weekend it was totally delicious and the kindlings loved it (14 months and 4 years)

We are having left over roast chicken for dinner tonight. I will fry some onions, mushrooms, add chicken and frozen peas and pour over a tin of mushroom soup, simmer for 10-15minutes and serve with rice. Yummy!

I'll second the chicken pie suggestion - my children love it. I do it like this

fry one leek chopped up small in butter and garlic. Add mushrooms and cook till all soft. Add a tub of half fat creme fraiche, pepper, a pinch of salt and any leftover gravy from the roast chicken. Also put a bit of paprika in it and then add lots of chicken. Bung it in a dish and cheat and roll out some frozen puff pastry for the top. Cook in oven for about 45 mins from cold. I cover the top with foil for the first 35 mins to stop the pasrty burning.

children love it, and so does dh.

Chicken stir fry - veg, sweet chilli sauce (or whatever your kids will eat) served with noodles.

Chicken fajitas - chicken, roasted peppers/veg, salsa, creme fraiche or guacamole in a wrap

chicken salad and chips

chicken and egg fried rice with peas

mild chicken curry

etc, etc.......
