Can I make soup with gorgonzola ...

... something along the lines of celery and stilton, I was thinking, but using gorgonzola? Would it work? Definitely a soup day

Yes but don't add the cheese until the last minute and don't boil once it's added, otherwise it will go all horrible on you.

Oh dear, is it best not to cook gorgonzola? How about melting it over pasta?

You can cook it, but just make sure that the heat isn't too high. I make celery soup as usual, sweat leeks and celery in pan with oil chuck in some stock, leave it until veg is soft and then in with cornflour paste and after it's liquidised, reheat gently with cheese crumbled in.

YOu can do add a bit of milk so it goes creamy but don't let it bubble too much .
