Super Fabby Christmas Ham Recipe Needed

I have also posted this in the Christmas section!

You know the sort of thing - criss cross pattern, spices, orange slices on it etc.

Don't know where to start.

Help!

Do any of you have / know of any recipes for a yummy show stopping ham???

delia's roasted sugar glazed ham is what i do. this month's good food has a roasted ham recipe plus loads of other christmas stuff.

I will look at both of those. I've heard of the cola glazed ham before but wasn't sure about it as i don't personally like cola - does it taste the same after cooking?

Or does it go sweet iyswim?

We use this method all the time now. Simmer it for half the cooking time in water to which you have added a bottle of cider (or apple juice if doing it for children and you don't want to use cider), a clove of garlic, an onion and a peeled apple. Then cut most of the fat off, cover the exposed fat with mustard and press on the darkest sugar you can get. Roast for the rest of the time. Doesn't last long in our house!

I've done ham in coke for the past 4 years, always goes down well ( I don't eat meat so don't know), this year I'm going to cook it in cider. Just say if you want the recipe... I'm at work so don't have it to hand.

Ingredients
1 x 4lb (1.8kg) gammon ham, soak overnight in cold water (enough to cover the ham in a pot)
2pt (just over a litre) cider
1 x litre (1¾pt) carton apple juice
1 large onion
1 bay leaf
8 peppercorns
2oz (50g) butter
4oz (100g) light brown muscovado sugar
1 tsp (5g) dry mustard
½ tsp (2.5g) ground cloves
½ tsp (2.5g) ground cinnamon
a few cloves

Method

  1. Preheat the oven to 220C/425F/Gas 7.
  2. Drain and put the ham into a large saucepan with the cider and apple juice and top up with cold water until you just cover it.
  3. Add the onion, bay leaf and peppercorns and then bring up to the boil. Now skim the surface and reduce the heat. Simmer gently for 1½ hours.
  4. Remove the joint from the pan, peel off the skin and mark the fat into diamond shapes with a sharp knife. Reserve the stock for the sauce and for later if you want to make soup!
  5. Stand the gammon in a roasting tin. Mix the butter with the sugar, mustard and ground spices to a paste. Spread this over the fat. Press a clove into the middle of each diamond.
  6. Roast in the oven for about 15 to 30 minutes, or until the fat is crisp and golden.

Did the Ham in Coca Cola last year, needless to say am doing it again this year. Amazing - no doesn't taste of Cola. Just caramelised barbequy sort of taste. Absolute winner with all guests.
