Cube it into large dice, coat in peanut butter, soy sauce and chilli and stir fry til crispy- yum. Try vegetarian websites for other ideas.

Extra firm silken would be best and that comes in vaccum packs in the healthfood sections/pulse sections of the supermarket. But well blended firm fresh tofu works too.

my favorites

soft silken tofu, sliced and sprinkled with chopped spring onion and seaweed and sesame seed mix with dash of soy sauce and chilled

firm tofu sliced and marinated in crushed garlic & tumeric powder then stir fried with onions, chili, fish sauce 1 chopped tomato and a sprinkling of sugar to caramelise.

You can also find olive/pesto tofu in organic shops. Works really well in salads and sandwiches

And I use soft tofu to replace cream/milk in bakes, soups etc...
