Cook!

I have just noticed that I have a carrot, courgette and some mushrooms at the end of their life and thought that I could use them today for lunch, I have staples like canned tomatoes, pasta, spaghetti, rice, couscous, herbs etc, so any ideas.

I was thinking maybe fry an onion and add in the veg, cook/fry, then add tomatoes and stir into pasta and put under the grill with cheese - any other ideas?

risotto?
grate carrot/courgette/onion
slice mushroom
Fry everything on low heat with thyme.
Add rice, stir until rice transparent
Add 1 lemon juice + rind + stock to cover.season well with pepper.
Stir every couple of minutes and add stock as it is absorbed by rice.
When rice cooked ( about 20mn) add 1 knob of butter and grated cheese.Make sure it remains moist (add a little stock if necessary)
Should look like poridge rather that a stiff blob of cooked rice.
