Hi, I am making fruit scones for my kids' school cake sale (they are in the oven as I type - scones not kids) and want to fill them with cream and raspberry jam. Have just realised that in Holland, not only can I not buy clotted cream, but I can't even buy double cream for whipping, only this horrible 'fixative' stuff to add to single cream. Would mascarpone cheese be a reasonable substitute for clotted cream? Need to buy within next hour!! Thanks everyone

Or maybe cream cheese loosened with some single cream? What on earth is the fixative stuff? It sounds awful!

Have just finished filling scones. Bloody shop had no mascarpone cheese left, so I ended up using cream cheese, sweetened a little and loosened as suggested. Oh to be near to a Tesco or Sainsbury's !!!! Thanks again
