Chicken and Sweet Corn Soup - Does any one have a recipe?

Hi Well thats it really.

We are hopefully moving and my lovely parents are comming back to help pack.

So I always like to have a large pot of soup on the go for the cold weather.

As I have a load of chicken in the freezer and a load of sweetcorn, does anyone have a recipe for Chicken and Sweetcorn Soup?

I just use chicken stock for the base and then add the chicken and sweetcorn to it. The chicken is nicer if you cook it in the soup in slices , although I generally do it with left overs.
You can add egg by beating an egg in a cupp and sort of swishing it into the soup, like they do in chinese restaurants. Also you can add noodles to make it more of a meal. I often add chinese five spice or wonton soup base to give it a bit of a kick.

  1. stir fry chicken + onion+ chopped ginger + soy sauce.

  2. chop1 cup sweetcorn with stock in blender

  3. mix chicken + sweetcorn mush + another cup corn kernels + stock.

simmer and add beaten egg befor serving.

very nice with a sprinkling of chopped coriander and spring onion.
