Lamb roast: Two questions!

CranberryMartini · 17/11/2007 12:58

  1. Does anyone know cooking times for lamb - have put a leg in marinade and thrown the packaging away.
  1. Are there any veg that are supposed to compliment lamb?

Thanks!

I always cook it 1 hour per kilo. Might be wrong but then I don't mind if it bleeds

I've tried many different formulas for cooking leg of lamb and Jamie Olive wins hands down IMO. His method is also very quick and has the advantage that you can do the potatoes at the same time as the oven is very hot.

You pre-heat the oven to 225 degrees C / 425F / gas mark 7 and cook it for:

10 minutes for every 450g/1lb plus twenty minutes for PINK
13 minutes for every 450g/1lb plus twenty minutes for MEDIUM
20 minutes for every 450g/1lb plus twenty minutes for WELL DONE

Turn every 30 minutes.

I like roast parsnips and minted carrots with lamb. Mmmmm...

Thanks - am I supposed to cook it uncovered?

Sorry - Jamie Oliver - in case that wasn't obvious!!

Do try it - when you multiply it up it sounds like crazily short cooking times (a big leg only takes about 1hr-1hr30 depending on how bloody you like it) but it really works, and makes the skin amazingly crispy.

Sorry x-posted.

Yes - uncovered.

Would it work in an electric oven that's got no fan?

yes, I've used it in both fan and non-fan. You might want to put the temperature up to 230 depending on how hot your oven is, see how it looks.
