An onion as well. But yes, that's pretty much what i use. Except for I like stilton in mone too

I would also used onion and garlic, but you don't have to (and for anyone who is interested, soya yoghurt works well). Also nice with some cumin powder.

My recipe is soften onion, then add broccoli and stock until broccoli is cooked. Stir in cream and melt in cheddar.
