And I only used 2 eggs for a 3 egg mixture - they were so big

I always knew the egg weighs 2 oz thingie - but when I went to the fridge this morning (after mixing the butter & sugar) - I only had 2 eggs left

I thought for a minute then weighed them - intending to remove the relevant amount of egg/sugar mixture to make it work - & the blasted things weighed 6 oz

Yes. Poor chickens today. All that clucking is them screaming FFS gimmee an epidural!

It's the result of generations of genetic selection and overfeeding IMO.

I agree about the genetic selection - but these eggs are from an orchard close by where they are uber free range - so I'm not to sure about the over feeding
