"Sunday Roast" style special occasion vegetarian dinners

Hi All,

Looking for some suggestions for vegetarian special occasion or Sunday roast style dinners. I find that I'm lacking inspiration or a 'centrepiece' for those lovely family dinners where there's a big spread and everyone kind of helps themselves. I've made nut roasts and served with the yorkies and other trimmings but I can't keep depending on that!

Any other suggestions? Thank you!

Delia’s parsnip roulade. I use the sponge recipe and fill with a thick cheese sauce, mushrooms and peas.

Beetroot tart tartin, topped with goats cheese if you’re that way inclined.

Cheese and onion quiche.

If you’re feeling really fancy and have the time, try a goodwill pie. Takes ruddy hours but I’ve done it for Christmas a few times and it’s incredible.

Delia’s parsnip roulade. I use the sponge recipe and fill with a thick cheese sauce, mushrooms and peas.

Beetroot tart tartin, topped with goats cheese if you’re that way inclined.

This one looks really interesting - what sort of texture does the outside of the roulade have when done? This is definitely the kind of recipe I'm after! Thank you!

The beetroot tart tatin also has my mouth watering! Do you have a link to a specific recipe you've used with success?

Unfortunately, the only thing I really don't eat is mushroom... keep trying them every now and again but they just don't do it for me!

I made a quorn and leek pie the other evening which was quite nice... I guess you could serve pie with all the Sunday Roast trimmings?

Same! I love family dinners with all the trimmings and I really love to spend a day cooking, but having given up meat a while ago I just find that my cooking isn't as exciting if that makes sense?

Oooh... what's a goodwill pie? Would you have a recipe?

I'd love something that takes hours to cook to be honest... nothing better in my book than a wet Sunday, family round, glass of wine in hand and pottering in the kitchen for the day!

I do a good veggie pie that has butternut squash and feta, I generally put a pastry lattice or other pattern on top so it’s not too dense, and then serve with all the roast trimmings. I think it might have originally been this recipe although I’ve changed it over the years: everydaypie.com/butternut-squash-caramelized-onion-and-feta-pie/

Itooks impressive and tastes delicious.

Make it the day before, or at least prep as much as you can.

That looks delish @JustKeep, thank you, this will definitely go on the 'Cook It' list! Let me know if you've any advised changes to the recipe...

...my oven really isn't super, it's electric and not fan assisted. It's new, but just not great unfortunately.

The Hairy Bikers do a fab veggie wellington. Strongly recommended.

At Christmas I make a butternut squash, sage and ricotta wreath using crossaint dough - it looks and tastes amazing. Pre cook the cubes of squash. Lay out the croissant dough (Jus-roll triangles) so they make a circle in the middle. Lay the sage, squash, ricotta around the circle and season. Fold the dough over to enclose the filling and make a wreath shape, then grate over Parmesan and bake in the oven. I think it is a Sainsburys recipe...

That cauli cheese pithivier looks Devine and definitely a centrepiece. Is it moist enough to serve on its own or would there maybe be a nice sauce to go with it if serving with roast potatoes etc.?

That’s the roulade. I really only use the sponge bit which works a dream and vary my fillings. Loads of green veg in a cheese sauce works well. Can’t be arsed with the nuts and stuffing but let me know what it’s like if you do it. The parsnip can be bland but depends what else you’re serving it with. The outside of the sponge is smooth and shiny.

www.bbcgoodfood.com/recipes/beetroot-red-onion-tarte-tatin I use cooled beetroot for ease and just warm it once the onions etc are cooked then lob it on a dish and pastry on top.

I had a roasted, stuffed butternut squash with some lovely side dishes at a vegetarian friend's house years ago. I don't think it was an Ottolenghi recipe but she loved the recipes from his books and it was definitely in the same vein.

A massive YES to that tart, it looks incredible...

All these beautiful recipes are making me feel so ridiculously disappointed at the lazy cheese pizza I picked up tonight as a 'treat' for myself because DS is with his dad 🙄

I always recommend these chestnut and mushroom puddings, they really are delicious, and we aren't veggie.
