this one stays moist for a good few days, so you can make it in advance. It's not sloppily moist, or soggy, just moist like (er) really good muffins:

Preheat oven to 180C
Grease and line deep round cake tin or two 7" sandwich tins

In one bowl, mix:
1 Tblspn white vinegar
2 eggs
1/2 cup oil
1 cup milk
1 cup cold coffee (hot coffee will scramble the eggs) or orange juice

In another, big bowl, mix:
2 cups plain flour
13/4 (one and three quarters) cup caster sugar
half a cup of cocoa
1 tsp salt
2 tsps baking powder
1 tsp bicarb

Mix the wet ingredients into the dry and stir well until fully combined.
Pour into prepared tin and bake for 45 mins.
Leave in tin until quite cold then turn out.

do you mean with sour cream in the cake batter, or sour cream icing?

if you mean sour cream icing, there is a great old delia smith one - choc sponge with a topping which is a small tub of sour cream, the same volume of melted plain chocolate and toasted hazelnuts on top

in the same vein is nigella lawson's chocolate guinness cake which has a deeply wrong sour topping, although i think it might be cream cheese

Nigella's Old Fashioned Choc Cake from Feast (which is identical to Sour Cream Choc Cake from Domestic Goddess) is good

American measurements sorry

Thanks all - will try them
