hugh fw has a recipe in one of his books. i've made it, was a bit dull. i bought some ready salted from butcher a while ago which was very good.

just found this in one of my books:

1.5 kg pickled brisket
1 carrot
1 onion
2 bay leaves
4 peppercorns
fresh parsley

wash meat, place in large saucepan, cover with cold water and bring to the boil
skim the top and add the veggies and seasoning
cover and simmer gently for 1.5 hours
allow the meat to cool, then drain and slice it

I really wanted a recipe for salting the meat myself but will ask at the butchers later

i have bought my pickled brisket, so no home salting for me this time

have got the recipe from my butcher and she said no onion (but otherwise the same as the recipe i posted)

i am going to make it tomorrow for dinner and hopefully will be yummy

have already bought rye bread, yellow mustard and pickles for the sandwiches on saturday

Don't forget the corned beef hash with it on Sunday morning! Much better with salt beef than tinned corned beef, just like the Americans make it.

'Tis very nice - fry up onions, diced potatoes (already cooked) and chunks of salt beef. When it's all nice and golden, add in seasoning and worcester sauce to taste. Top with a fried egg. Mmm.

well, i made the salt beef tonight

it was lovely

i tweaked the recipe slightly - no parsley and more carrots and simmered for the best part of 3 hours

was so tender and delicious

we have plenty of left overs as well

never heard of pickled brisket,will any butcher have it?
how much was it?

got it from a kosher butcher, but i assume any butcher will have it

kosher meat price was £18 for a 1.3 kg piece

i assume non-kosher will be much less
