I am so rubbish at deciding what to have for dinner and im even worse at cooking it!! I'm ok with the standards like roasts, lasagne, spag bol and shepherds pie. Thats about where my repertoire ends. I tend not to follow recipes as i always end up frustrated as i dont have the essential sprig of rosemary or fennel!!

So, heres the thing - tonight, i have: chicken breasts, brocolli, mushrooms, pasta, cheese and cream, oh, and onions. How on earth do i make anything edible out of that?

cook the chicken
cook the brocolli - but not too soft
cook the pasta
(all seperately)

chuck in an oven dish (like a lasagne dish or similar)

cover with cheese sauce

sprinkle some grated cheese on top

in oven (180degrees) for 20-30 mins

hey presto

sometimes i add cayenne pepper to the cheese sauce

Make a mushroom sauce with the cream and mushrooms and use that instead of a cheese sauce?

PandaG · 14/11/2007 16:29

do a white rather than a cheese sauce, eveything else as above

we like pasta with broccoli, chicken, cheese and mayo in this house. Also chuck in things like mushrooms and sweetcorn to up the veg quota. So simple to do. We also do it with tuna instead of chicken.

gently soften the onions and mushrooms in butter in a saucepan. Remove them, set aside. grill the chicken.

Add enough flour to butter to make a soft paste, stir around for a bit until blended, and add milk slowly, beating it in thoroughly. Add milk slowly until you have a sauce consistancy and add grated cheese and the onions and mushrooms.

Boil up the pasta and broccoli, and add the sauce when cooked

Do it with pepper and cream instead of cheese if tyou like.

do you have any green pesto?

I make pasta with chicken, brocoli, cherry tomatoes, creme fraise (sp?) and pesto then scatter toasted pumpkin seeds over it. I'm sure you could get away with a bit of cream instead.

ok - ideas on board, hungry family awaiting the results
