Quiche might be beyond me as not great cook. Could poss go with the chopped tomatoes. What do I do? Fry them then simmer?

chope up the vegetables into large pieces, drizzle with a little oil, then roast them in the oven. Add the tinned tomatoes afterwards. it goes great with boiled rice.

do you have onion (and garlic)? Fry in olive oil, chuck in chopped veg and toms, season and simmer, serve with pasta or rice. easy and tasty .

DH has vetoed and we are going for fish and chips when the DDs are in bed.

But I am cooking a soup as we speak and I'm going to freeze it.

Actually, I got DH to try some and he loved it so we have just had soup and sandwiches.

3 peppers, 2 leeks, 1 courgette, 1 pint of chicken stock and a bit of seasoning.

He has even just said 'remember how you make it and we'll have it again'.

have you got any fish in your freezer? Would be nice all chopped up and sauted in butter with a sprinkle of marjoram. Grill / roast some white fish and serve with.

Yes, I did soup. I blended it all but yes the courgettes were fine. The peppers made it tbh.
