Sausage casserole recipes please...

I have 4 lamb and corriander and 4 pork and somesortofberry (bought from farmers market at weekend) - do you think i could put them in the same casserole? and if so, what else would i put in it?

Chopped up bacon, red wine, chopped tomatoes, rosemary, worcester sauce, onion, big pile of buttery mash and bobs your uncle.

oh, probably

favourite sausage casserole chez Badger

Heat some veg oil in a big saute pan
Add 500g potatoes thinly sliced
500g sausages cut into 3cm pieces
2 sliced onions
Cook stirring occasionally till golden brown
Add 1/2 pint hot chicken stock
Put on lid and simmer 10min or till spuds are tender
Taste and season
Scatter grated cheese on top and stick under grill till golden & bubbling

You can throw a couple of hanfduls of frozen veg in too, or just serve veg on the side.

DH's favourite: Spicy sausage casserole

Onion
Sausage (pre-browned)
Peppers
Tin toms
dollop grainy mustard
dollop mango chutney (or honey)
Chilli flakes or tabasco
red wine
I don't bother frying off onion first just throw it in ovendish, 180 for 45 mins ish.

Fry off some chorizo, red onion slices and chilli flakes, add sausages and brown, add about 100ml red wine, carton of tomatoes, 100ml beef stock, tsp of paprika, cook for about 30 mins at 180, then add tin of cannelini beans and cook for another 15 mins.

boil some new pots
brown sausages - cut into 3 and set aside
saute onion & sliced carrots in olive oil for a few mins
sprinkle in some flour and stir
pour in small bottle of nice cider
pour in chicken stock (enough to cover veg and sausages)
add sausages to pan
simmer for few mins
chuck in some herbs & seasoning (thyme would be nice)
pour everything into casserole dish
crush the new pots with back of fork and mix with diced apple - pour onto casserole
put in over for 20-30mins or so.

so basically you can just fry off some onions and sausages bung anything else in, cover with wine/toms/stock and stick it the oven for about 30 mins. sounds easy.

I usually just do sausage and mash with gravy...mmmmmm yummmm.... but feel like something a bit different.
