Please help! need an easy recipe for a simple sponge cake.

It's to take to nursery for dd's birthday, so no nuts and nothing too fancy.

The only sponge cake I make is banana and I'm a bit fed up with it....

If you want a sandwich type (ie 2 layers)
6 oz self-raising flour
6 oz sugar
6 oz butter
3 eggs.
a teaspoon baking powder in wit the flour. Mix all together and beat really well (electric mixer is good here) divide into tins (line them if you are concerned about turning out) and bake 160C for about 20 minutes.
Add 1oz cocoa powder if you want chocolate(subtract 1oz of flour) or lemon juice/zest for lemony. Or choc chips. or raisins.
I used to go into the school once a week to do this cake with the kids, so I can do it blindfold its so easy.

Otherwisse I do 4/4/2 (ie 4 oz flour, 4oz butter, 4 oz sugar and 2 eggs, pinch baking powder) and bake in a small baking tray (about 10" x 7") - it's only 1 layer but I ice the top and it's gone in seconds.

Thanks sparkybabe, that's just what I wanted!
Would you put jam and cream between the layers of a basic sponge? And is it whipped whipping cream?
Sorry, I'm a bit clueless when it comes to baking!

(but cook from scratch, before I get marked as the bad cook in mn by the good cooks brigade!!)

I suppose if it's for LO's I would put just jam (seedless raspberry) and leave the cream for adults.(less messy that way)
Actually if I was taking it into preschool i would do a traybake (1 layer) with maybe choc chips and leave the icing out. It'll go further, be less messy and it'll still disappear.
