From the worlds worst cook Ive just thrown together a chicken casserole!

I first of all browned 4 chicken thighs and a pack of chopped up breast in olive oil then added 2 chopped onions.

Then I transferred to slow cooker and poured over some vegetable and some chicken stock

Then I added carrots, swede, celery and more onions.

Put lid on.

Will this be ok!?

what times dinner ???

Ive just done it so that the chicken was used as it was defrosting in the fridge so think i will freeze it for next week when it is done!!

If its edible that is!

It should be fine, but as you haven't thickened it at all the sauce may be a bit runny (it tends to be runny in slow cooker anyway) - if so then put it on the stove top and reduce a bit (ie boil until it thickens)

sounds yummy - you could chuck in some wine and herbs if you have any to hand

should be ok to heat up + eat.. but am not so sure about freezing it to keep (if the chicken had already been frozen/defrosted)
I'd be interested to know about this too...

If fresh then frozen, cooked you can refreeze. So I understand. Have certainly done so myself in the past, and I'm still here!

Sounds yummy.
