best turkey stuffing recipe for xmas?

I know this is dumbest thing ever. . .it's so far before xmas. . .but can you recommend a good stuffing recipe?

A nigella one would be great b/c i have nearly all of her books (just not the baking one)

Also: can they be made ahead of time and frozen? if so, does that change the flavour?

We do a fab one,= which is actually for goose, but is divine.

For the spiced cranberry and apple stuffing:

9 oz (250 g) cranberries

1½ lb (700 g) Bramley apples, cored and cut into ½ inch (1 cm) chunks, skin on

2 oz (50 g) caster sugar

2 oz (50 g) fresh breadcrumbs

1 large onion, peeled and chopped

1/8 level teaspoon ground cloves or 8 whole cloves, crushed

¼ level teaspoon ground mace

2 tablespoons port

salt and freshly milled black pepper

This looks amazing.

What does "forced meat" mean. I don't see any meat in the recipe (which is great, really).

And you think it's OK for turkey?

1/2 lb sausagemeat
1 x pack of chestnuts chopped
1 x onion chopped
6 slices of bread made into breadcrumbs
teeny tiny splosh of stock
1 x egg

mix well and stuff turkey neck. Top tip - when the bird is cooked remove from the oven and rest the meat before ripping off the skin with the stuffing in and devouring before anyone sees

i do one with chestnut puree and apple - yum!

Furball's recipe + when you fry chopped chestnuts and shallots add a dollop of brandy and reduce.
Then mix with meat/breadcrumbs/egg

Furball, I think I use your butternut squash risotto recipe which you posted on here I think in 2001 or 2002!

Question for Bree, in case I use your recipe:

where/how does the sausage meat figure into the recipe? (I've never made stuffing, so I'm sorry if that's a silly question.)
