Leeks - what can i do with them?

I have a few that need to be eaten. what can i do with them?

delia has a recipe for shepherd's pie where she puts leeks as a topping on the potato. SOunded nice.

I'd do leek and potato soup but then I'm not that imaginative when it comes to food.

I'll find you a link but I also steam them for 5 mins then cover them in cheese sauce and bake (like Cauliflower cheese).

L&P soup is the easiest in the world.

I saute the leeks (chopped into inch long pieces) in a little butter, for a couple of minutes, chuck in some peeled chopped potoaotoes and enough stock to sort of cover them, leave until the potatoes are cooked then blitz I add fromage frais to mine to keep it extra healthy but a little stirred cream is fab.

freezes brilliantly and is sooooo filling!

Put in baking tray, add dots of butter and bake. Totally delicious.

I often use leeks instead of onions, particularly when cooking for dd.

I like them best with a cheesy sauce. Yummm.

Fry them in some olive oil with some garlic and chilli if you want a bit of spice. Add bacon (easier to use lardons) until cooked. Mix into cooked pasta with a couple of dollops of creme fraiche and parmesan on top. It's very simple and very tasty!

FIL gave me lots of fresh leeks from his allotment yesterday and I am making a baked leek and pancetta risotto later this week.

It is easier than normal risotto as you bake it in the oven, but is very yummy. Cut out from one of the Sunday magazines.

Lovely with Boursin (the garlic and herb one).

If you haven't got any Boursin, crush a chopped garlic clove into a fine paste, mix into some plain yoghurt/creme fraiche/cream (whichever you have) and add some mixed herbs and lots of black pepper. Stir this into cooked leeks.

My mum does pancakes stuffed with leeks & ham baked in the oven with a cheese sauce over the top

bbq them from raw with other veges, peppers, sweet potato, carrots, etc. If don't fancy standing out in rain oven roast with other veges, yum.
