Help - vegan recipes wanted!

My son has just phoned and asked if he can bring his new girlfriend round. She is vegan! We are not. Any ideas on what we cn feed her? Have also posted on Recipes as desperate!!

what can you cook?

For example, if you want to cook something you can all eat, there are vegan cheeses and soy milk available to make something like vegetable bake?

How about roasted pumpkin soup followed by a nice veggie chilli, green salad and bread.

thanks fullmoonfiend. My panic is that this is tonight and I REALLY do not want to go out shopping again - got Strictly Come Dancing to watch in half an hour for a start have had loads of help and links and because we have a load of vegetables in the fridge and cans of stuff like tomatoes/beans/coconut milk I think I will be fine doing some sort of chilli or curry. Wouldn't be my first choice of dinner but some really quite nice looking recipes.

going downstairs to recce the fridge and cut up the brownies I made before which she, presumably, won't be able to eat?

Yes chuck the beans into a pan with some curry powder or chillli paste, and the tomatoes and cook until thick, then thin down with cocnut milk. Done.

My current au-pair decided to go vegan after being with us for two weeks. It's been a constant challenge to make sure she is eating a diet that doesn't leave her tired, anaemic and unfit for duty
Tonight we are having marrow ragout and wholemeal pasta.
I also make loads of soup (thick so it's more like a meal) and have made some pretty good scones with wholemeal flour, soya marg and soya milk.
Salad is always good here, and also tofu stir fry and oat cakes with hummus.
