I made a lemon and blueberry ricotta cake and left it to cool while I did the school pick up. As I turned it out it broke and I could see it wasn't done all the way through. I have put it back in the oven, and after one check, I think it will need a couple more minutes. It has been out of the oven since 2.30pm. Can I use it?

I would.

Would you let the children have it too? They are 2, 4 and 6.

Ummm... yes. I think so. Except that mine wouldn't eat it!

I do have pretty low standards though...

Hi

Yes!

I does have quite a moist texture and I am thinking that must be the nature of the cake as I cooked it for well over the suggested time.
