Too late for tea I know (I make them for breakfast, but this is my fail-safe recipe:

8oz s.r. flour 2 level tsp baking powder pinch salt 2 oz caster sugar 1 egg 2 tsp syrup 10-14 fl oz milk

Sift the dry ingredients into a bowl, and mix wet together (using 10 oz of the milk, then whisk into dry adding more milk if required until you get a thick cream like consistency.

Whilst doing this have your pan or griddle heating up on a low to medium heat. If not non-stick grease lightly with melted butter.

Pour quantities of the mixture into pan, and wait till bubbles form on the surface and they look "dry" at the edges, then flip over and leave for about 30 seconds or so.

This recipe is excellent with slightly sour milk. I've tried other more sophisticated ones but this is the one my children like best and is indescribably better than bought ones.

Thank you. I found a recipe on the internet last night but they didn't turn out quite as I'd have liked. I will definitely copy this one down and try it next time. thanks
