Recipes for vegetable soup, please!

Right, I have some cauliflower, broccoli, parsnips, potatoes, onions. Can I make a veggie soup out of this and if so how? Do I add stock (vegetable or chicken?), do I add milk?

Chop veg, sautee in a little oil, add stock, which ever you have, chicken probably a bit better, simmer for 30 mins, puree, season, add milk if you want.

fry your onions in a little bit of oil till soft

chop rest of veg

chuck it in

put some stock in (not milk; veg or chicken)

bubble till potatoes cooked

The veg soup I make has onions, carrots, leek, turnip, tom puree, parsley and stock in.

No reason why those ingreadiants wouldn't work.

My fail safe base is: 800mls stock + 1 onion + whatever veggies you want - saute the veggies, add the stock, simmer and blitz.

Infamous 'green soup' = onion, courgette + watercress (added at the end once heat off)

Pea soup: 950g frozen peas, 800mls stock + one garlic clove.

those ingredients sound good to me You can add lentils/ quinoa to up nutritional value and I always find a spoonful of marmite adds a lovely warmth to veg soup - any fresh herbs and garlic are also useful additions. You should add stock if poss (swiss veg boullion is my favourite).
