Does anybody know how to make a chicken curry? Usually use a jar of sauce but I am feeling daring! Thanks

This Madhur Jaffrey recipe for rogan josh is really good, and you can substitute chicken for the pork.

I love making Indian food, but it's a little time consuming and not much fun just doing it for myself. Can I come to your house for dinner?

I love MJ, and have made lots of recipes from her book. Her recipes are fiddly, but fun to do if you have the time and really delicious.

well... a very basic one that I'm sure you could embelish with what you have to hand and to suit your own tastes would go along the lines of:

fry onions in oil until golden
throw in curry powder, garam masala, cumin and tumeric and chopped or pureed ginger and garlic and fry for a couple of minutes stirring continuously
add a bit more oil and throw in the chicken pieces making sure they are all coated with the spice and onions
add a couple of tablespoons of tomatoe puree, a teaspoon of brown sugar and a can of coconut milk bring to the boil and simmer til thickened and chicken tender
garnish with chopped coriander and if you have it stir in some dark soy sauce and a dollop of natural yogurt.

I'm usually reluctant to use commercial curry powder, as opposed to a Madhur Jaffrey type recipe with a bunch of different spices. I just don't like the flavour that much. But Suzy your recipe sounds yummy, with all the other ingredients. I might just try that myself!

Thanks for the advice guys. Suzy - your curry sounds straight forward and made my mouth water! Thanks. Kate you are more than welcome around my house for dinner, but my cooking is a bit of a nightmare - hence the cooking advice!

There's a thread over on the recipe board for Malaysian Chicken curry. It's really, really easy and quick and dh said it was fan (bloody) tastic. Have a look.
