Cook the macaroni.

To make the sauce, melt a couple of tbsp butter, and sprinkle in some dry mustard, and then make it into a paste by adding flour.

Next, whisk in milk, and bring gently to the boil. It should thicken nicely. Turn off the heat, and add grated cheese (strong cheddar works well).

There's a thread on this here. The Jamie Oliver one is great. Haven't tried the others, but don't find a traditional white sauce recipe gives good consistency.

the best ever mac cheese is my mums

chop an onion and throw it in the pan with the pasta to cook

make white sauce, add mature grated cheddar to taste, then add tin chopped tomatoes

stir through cooked pasta and onion

grated cheese on top and oven bake for 45 mins (last 10 with foil off) at about 180
