Easy peasy cake recipe

Does anyone have one of those 'all in one' cake recipes I could use before hubbie returns from his business trip later today -you know the ones I mean where you basically put all the ingredients in together, mix well then transfer to cake or loaf tin to be baked in oven?!

Okay..... to make it as a round cake do 6,6,6 and 3.

6 flour, sugar, butter, 3 eggs. Use 2 tsp baking powder and 4 tbls milk.

Divide the mix between the two sandwich tins. Then I would make a butter icing for the middle (just butter and icing sugar.... maybe add some lemon juice), then do the topping as before.

Recipe... okay

12oz flour
9 oz sugar
9 oz butter/marg
4 eggs
3 tsp baking powder
6 tbsp milk
zest of 2 lemons

Pop it all in a bowl and whisk. Pop into large roasting tin or large square baking tin (which you should line with baking paper, but I don't always).

Cook on 180 or Gas 4/5 (I think) for 30-40 mins. To test if it's cooked pop a knife into it. If it comes out clean it's cooked. You can also press the top and see if it springs back up.

Prick it with holes. Warm the juice of the 2 lemons in the microwave for about 20secs. Spoon 3-4 tablespoons of lemon juice over the cake. Mix the rest with icing sugar (as thick as you like). Voila!

Many thanks MamaG - I really should have looked in my cupboards/fridge before I asked - bit of a tall order without any eggs or baking powder to hand - sorry, totally disorganised - just need something smelling good as he walks in after long journey ...(excluding me with a quick dab of perfume!)
