First day of Mat Leave - what can I cook DP for dinner?

I would like to cook DP something nice for dinner at a reasonable time (i.e. ready by 6pm).

Do you have any nice vegetarian recipes that i could try? I am thinking of doing my speciality macaroni cheese but thought i'd like to ask if you guys could give me a recipe for something different first.

i made a veggie feast recently, of veg fajitas, nachos, guacamole, salsa and beans...

twas delish!

I'n not vegetarian but I love veggie kebabs with chunks of pepper, onion, mushrooms, sweet potato etc brushed with oil, sprinkle with herbs or spices & grill for a few mins.

Tonight I'm doing twice baked potatoes with tea - baked potato, cut in half, scoop ot the flesh & mash with sour cream. Add chopped onion, pepper & sweetcorn, top with grated cheese & pop under the grill until cheese melts. Yummy!

lol yes i am supposed to be resting but he works so hard and i would feel awful sitting on my bum eating cake all day while he's at work. The least i can do is make his tea!

Lulumama - your recipe sounds the most appealing at the mo although i do like the sound of the jacket spuds twice removed from Iklboo!

lol foxy. He's well aware that i might not cook every night for him. TBH, i really dont mind doing it most nights, baby permitting of course!

make double and freeze the rest. Nice feast for when you can't be arsed cooking.
