Can someone please tell me a easy way to make carrot cake

here's my foolproof carrot cake recipe...

10oz plain flour
2 tsp baking powder
1 tsp bicarb
pinch salt
6 oz brown sugar
2 oz mashed walnut
6 fl oz corn oil
6 oz grated carrot
3 beaten eggs
2 mashed bananas

beat together, put in cake tin, bake at 180 for 45 mins

icing:

beat some butter, cream cheese and icing sugar together, spoon over cake and add walnuts for decoration.

It is really easy and delicious I would second Hells recipe and I like to cover mine in a mixture of mascarpone, lime juice, icing sugar and sour cream.

I do the Mary Berry one with a bit less spice and butter icing. It works great every time.

Yes but it is on carrot cake so it is healthy

haha! i always manage to convince myself that the 6oz of carrot somehow cancels out all the sugar and butter that comprises the rest of the cake...
