Cookery types! Ideas for chicken / white fish here please!

Hi, I am sick of cooking same old same old.

We eat a lot of chicken fillet strips, either as a curry or a stir fry.
Are there any other recipie ideas?

We also eat white fish ie. hake/sole but I dont know how to season it/ make it exciting so we have it with brocc and potatoes.

Ideas please!!

You can cook both in the oven in a foil bag (with your veg as well).

We do the following:

  • cream, white wine, mushrooms & thyme
  • coconut milk, chilli, ginger, coriander, garlic, lemon grass, lime juice
  • white wine, other herbs, bit of butter (tarragon goes well).

I also make fish burritos with white fish. Chop fish into strips. In processor mix 1 red chilli, handful coriander, 1 tsp cumin, lime zest, 2 tsp paprika, salt & pepper, small cup olive oil to a paste. Cover fish in paste and leave for 15m.

Make a salad with cucumber peeled, dessed and sliced, cherry toms halved, coriander, 4 spring onions sliced, s&p, lime juice, red chilli and a tsp sugar.

Add two tbsp lime juice, s&p to some mayo.

Cook fish in a frying pan in batches.

Serve all with tortillas, little gem leaves and everyone makes up their own burritos.

With the chicken I slice up somepoataoes enough to cover the bottom of an oven proof dish twice, one layer on bottom one on top, cooks chicken fillets with onion, and the add tub of creme fraiche and som tarragon, layer potaotes on bottom,then chicken mixture, then potatoes and the grate over any cheese that you want, we use gruyere.

I have got a recipe for cod baked with couscous, other than that we usually have it in fish pie or dusted with flour and fried.

gas 6 and 45 mins? or longer?

really nice indian style oven baked fish -

ingredients
6 X 8oz (250g) white fish fillets
4 tablespoons oil

for the whole spices
4 cloves
4 cardamom pods
1 in (2.5cm) stick of cinnamon
1 teaspoon fennel seeds
2 teaspoons cumin seeds
1 teaspoon mustard seeds
5 cloves garlic, finely chopped
4 Spanish onions, sliced in rings
1/2 teaspoon salt
1 teaspoon ground cumin
1 teaspoon ground coriander
2 teaspoons turmeric
1 teaspoon garam masala
4 whole green chillies (or to taste), de seeded and finely chopped
2 3/4 cups (21 fl oz) 600 ml natural yoghurt

method

  1. Pre heat the oven to gas mark 5, 375°F (190°C).

  2. Heat the oil in a heavy pan over medium heat and throw in all the whole spices.

  3. Wait for the cardamom pods and mustard seeds to pop and the fennel and cumin seeds to turn golden brown (this takes just a few seconds).

  4. Now add the garlic, onions and salt and continue to fry until the onions turn a deep amber colour. Add the ground cumin and keep stirring. Add the ground coriander, turmeric and the garam masala as the mixture reduces, then add the chillies and continue to fry.

  5. Turn down the heat and gradually incorporate the yoghurt into the mixture, a tablespoon at a time.

  6. Wash the haddock fillets and pat dry with kitchen paper. Place them in a lightly oiled baking dish and pour over the spicy yoghurt sauce.

  7. Bake in the oven for about 30 minutes, or until the fish is cooked.

I make this loads. It's really nice wtih potato basmati, or idnian rice with dhal in it.

For sole, if whole, sole meuniere.

For hake, try a spanish style fish soup with chorizo, white beans, aromatic veg, and toss in the fish for the last 7 minutes of cooking.

Agree with the foil bag for fish with veg and seasonings

Chicken Breast:
Fajita
Wiener Schnitzl
Parmesan chicken strips (breaded chicken with parmesan, garlic, and seasonings)

joan, nope, not much spicier than a korma, and tastes creamy like a korma, but with a lot more flavour.

white fish (my own recipe!)

put frozen white fish onto a large piece of foil paper to wrap up after finishing (and its on a baking tray too)
smear with butter/marg on top of fish
peppers - red, green and yellow - chopped
half of a small red chilli
squirt lemon juice on
mixed herbs sprinkled on top
and wrap it all up together
put in oven for 20 mins and check

its gorgeous! serve with new potatoes or salad

Coq au vin is an example of a chicken stew. However, in general, I find that chicken becomes too tough if one tries to stew it.

yummy this works well with both prawns as per the recipe or with chicken and tarragon (i stir fried the chicken and added it cooked at the same point you add the prawns)
