Seared teryaki tuna sliced on a bed of rocket with balsamic vinegar, or on a bed of noodles.

Marinated tuna with butter beans is also nice and needs no cooking.

juice and zest of two lemons
2 cloves garlic, crushed
1 x 400g/14oz tin butter beans
2 tbsp flat leaf parsley, chopped
4 tbsp olive oil
225g/8oz very fresh raw tuna loin
salt and freshly ground black pepper
crusty white bread

Mix together all the ingredients except the tuna.Slice the tuna into thin slices and add to the marinade ingredients.
Cover the bowl and leave in the fridge for between an hour. Serve with crusty bread.

or... just lightly grill them so they are still quite pink in the middle and serve with guacamole and new potatoes

simple, but nice.
