Your carrot soup recipes - please

Carrots were half price this wek and I want to make carrot soup please can i have some help to make a really lovely comfort soup.

As my dd has a retainer and she would like some nice soft comfort food I thought soup would be good. {grin]

1lb carrots
1 large onion
a small potato
a large cooking apple
2oz marg
2pt veg stock
bunch coriander
cream 1/4 pt

chop & sautee veg & apple, add stock. Simmer for 30mins.
Cool, blend. To serve reheat add chopped coriander and cream.
I suppose you could omit the cream!

A really cleansing one is carrot and orange soup:

1lb carrots, chopped
a splash of olive oil
water
fresh juice and zest of 4 oranges
coriander

Sautee the carrots for a bit and then add the other ingredients. Simmer for 20 mins and then blitz and serve.

I always use orange and coriander and lots of black pepper.Not always potato, depends. Otherwise as others have said. Does it smell good ivy? We made some for tea earlier this week but had no oranges so had to bung in satsumas instead!

I'm no good with quantites, but:

Some chopped carrots
Cover with water and add a bit extra.
Knorr vegetable stock cube
A couple of cauliflour florets (frozen is fine)
Cook until carrots are soft. Whizz with a hand blender.
Serve with a swirl of cream / creme fraiche and a dusting of powdered coriander.

(Makes a really smooth soup and the cauli takes a bit of the sweetness away)

Mmm it's really lovely - I sauted/sweated the carrots for a few mins with some olive oil and then added boulion stock 2 and half pints scattered over fresh coriander and then brought to simmering point, popped in the oven for 30 mins (whilst I mowed the lawn) and have just put it through the food blender.

It did look a bit wierd and as if there was to much water but it has come out as a smoothish soup which will be lovely with some bread - not crusty with the retainer though!
