Should you use cooking apples or eating apples? (its for adults)

Definitely Bramleys.

Mixture of caster, muscovado and demerara sugar in topping, plus cinammon.

Proper butter, chilled so is hard when you rub in.

And don't make the crumble mix in a food processor, it is too uniformly sized. The crumble's best when it's all a bit roughly done with your hands.

Oh yum!! Now I want some (and some rhubarb crumble whilst I'm at it!!)

Use cooking apples, don't skimp on the sugar with the apples and use lots of real butter in the crumble. Better to have a really good naughty one less often than an average healthy one more often. (as the actress said to the bishop)

nigel slater's tip for crumble it to sprinkle a tiny bit of water into the crumble mix, so it sticks together in little clumps. works a treat for me. i usually use granulated sugar and some ground almonds in the mix. always cooking apples.
